Based in Manchester for more than 11 years, he has refined his craft in iconic venues such as the Marriot Hotel, the Midland Hotel and Novotel Manchester. These roles have allowed him to master the codes of international hospitality while developing a reninded, generous and precicely executed cuisine.
Curious about all world cuisines, yet firmly specilised in European cuisine, Nicolas delivers a modern, elegant, and product-driven approach, where technical precision meets culinary pleasure.
